INGREDIENTS - 400G (l4oz.) ground beef 1 small slice bread soaked in milk, 2 eggs, handful parmesan cheese, grated, ½ teaspoon nutmeg, salt and pepper.
Ingredients for sauce - 1 tablespoon butter, 4 tablespoons oil, 1 small onion, thinly cut. 4 carrots, thinly sliced, 1 stick celery, thinly chopped, stock or broth.

METHOD - Mix the ground beef egg, bread, cheese, nutmeg, salt and pepper and form the mixture into a meat loaf the coat it in dry, breadcrumbs.
Melt the butter with the oil in a large pot.
Place the meatloaf in the pot and brown it well on all sides then remove from the pot.
Cook the onion, carrot and celery' in the same pot, browning them lightly.
Place the meat loaf back into the pot with some with some stock or broth and cook for about an hour.
To serve, slice the meat loaf then pour over the sauce.
