BEAN SOUP WITH FARRO

300 g borlotti beans (also know as coco rose beans)
2 good sized potatoes cut in small cubes
200 g Farro (or barley pearls)
1 onion, I carrot, I stalk of celery
2 vegetable stock cubes, 2 ripe tomatoes or some paste
Oil, salt, pepper

Chop and sauté gently the onion, celery and carrot, until golden.
Add the beans that have been soaking overnight, and about 2 litres of hot water. Add the tomatoes chopped or the paste, the stock cubes and the potatoes.
Bring to the boil and simmer for a couple of hours or until the beans are soft. Add some salt and pepper.
Mash some of the beans and tomatoes and remove part of the liquid to cook the Farro previously washed.
When the farro is “al dente”, add some of the thick vegetable soup and serve topping each plate with a light swirl of olive oil.
