RIBOLLITA

1 onion
slices of stale bread, preferably from a wholemeal loaf
4 tbsp grated Parmesan cheese
Leftover bean soup
Olive oil

Ribollita means re-boiled and is a way of using leftovers.
Slice the onion into very thin rings.
Cover the bottom of a baking dish with 1 cm thick slices of bread, sprinkle the cheese and pour over the bean soup topping with the onion rings and the Parmesan and bake in a moderate pre-heated oven for about 20 minutes or until the onion rings have turned golden brown.
Remove to the table and pour over a very thin film of good olive oil and serve.
