Florentine roast pork

1 kg loin of pork
grated rind of 1 lemon
1 sprig of fresh rosemary
2 cloves of garlic
salt, freshly ground pepper

Make small cuts in the meat and fill with the the herbs and the seasoning that you have mixed together.
Cook on a spit or in the oven, moderate fire, gas 3, for apprx 30 min per pound, turning frequently.
Pork roasted this way is also very good eaten cold.
