Small stone building in need of some modernization, situated in the upper part of the Valley, 66 km North of Lucca and about 100 of Pisa airport, and about 650 m asl.

The house, on three levels, is only 50 square metres as total area but could become a quaint little place surrounded by approximately 1000 square metres of land with trees.

Red mullet

8 medium or 4 large red mullet
600 gr ripe or canned tomatoes
1 stalk celery
1 bunch parsley
3 cloves of garlic
salt, freshly ground pepper, oil

Chop the herbs keeping few sprig of parsley and heat in a large and deep pan, when soft add the chopped and sieved tomatoes, season and simmer for 15 minutes. Then push through a strained and return to the fire.
Add the fish in a single layer, if they are small there is no need to turn them, otherwise carefully turn them over to cook evenly.
Just before the fish is ready sprinkle the finely chopped parsley and serve very hot.
